Home Made Chia Seed Pudding

and today I used said home-made almond milk to make a chia-seed pudding.  It is the best chia-seed pudding I've ever made/had and it makes for a really sustaining, cleansing, nourishing, protein rich, yummy kind of a breakfast!


Here goes:

3 tablespoons of chia seed
1 cup of almond milk (home made)*
half teaspoon of maca
half teaspoon of raw cacoa powder
a tablespoon(ish) of goji berries 

Take enough almond milk out of the fridge 'til it's room temp.
Put the chia, maca, gojis and cacoa pwdr in a bowl and stir together
(you can even add a little turmeric)
Pour the room temp almond milk on top
Stir it all up together

Leave on the counter to thicken up for about 5-10 minutes
Put it in the fridge and leave for about an hour**
Take out of the fridge and enjoy.  Eat it with a teaspoon, sitting down,
mindfully, chewing.
This amount could be two small portions or one really good size for breakfast to
get you going!  This one would be great to power you up for physical labour, before a run or after your workout.  I just had this for breakfast after a challenging yoga class and wee bike ride, and it feels
perfect.

* You could put the almond milk back in the blender and mix in the maca and cacoa if you felt like doing so, maybe even add a little more vanilla bean if you wanted to - not the fake vanilla essence.
* You might also choose to mix together half almond milk and half coconut water to
make a sweeter pudding. 

** you could also leave the pudding in the fridge overnight for the chia seeds to expand, to enjoy for breakfast 
Optional extra ~ You could add a pinch of ginger powder to the mix, and/or
you could top with blueberries, banana, other berries... as you wish.
