Dorry's Nut Taco Lettuce Wrap Heaven!

This recipe came to me by way of the very lovely Dorry Bless, a sweet fellow celebrant friend who shared this recipe on our cleanse journey!  Mike and I have made this dish twice this week it is SO very very tasty.  What I love about this dish is how hearty and satiating it is in cooler weather, even though it's a totally raw dish.   Much gratitude Dorry for introducing more deliciousness into our repertoire!

Dorry's Nut Taco Deliciousness

1 cup raw Pecans (you can also use raw soaked Nut Taco Lettuce Wrap DishAlmonds, or walnuts)

1/2 cup raw Sunflower or Pumpkin Seeds

1 1/2 tspns Cumin
1/2 teaspoon of smoked paprika

1 bunch of fresh Cilantro

2 tspns wheat-free low-salt Tamari Sauce

1/2 tspn Sea Salt

1 tspn fresh finely chopped Jalapeno Pepper (or to suit your taste buds)

1/2 tspn cayenne pepper or chili powder

3 tblspns water (we needed more than this to get our blender blending, experiment a little here

And also:

1 to 2 heads Romaine or Boston Lettuce or red or green cabbage leaves or large Spinach leaves or Collard Greens

1 medium chopped tomato

1 diced avocado

A handful of fresh pea or bean sprouts (it's ok if you can't find these, just ommit)

1 scallion - chopped

1 lime - for it's lovely juice
Optional extra ~ A generous pinch of chia seeds

What you need to do:
~ Blend all the "meat" ingredients (1st group above) in a blender or food processor until chopped but not fully blended.

~  Lay a piece of lettuce (or cabbage/collard/green of choice) on a plate - dollop on the nut meat and cover with tomatoes,

avocado, sprouts, and a generous squeeze of lime.
~ If you have them, sprinkle some chia seeds on top of each taco too.
~ Sit down, look at your meal, take in the visual of colour, the smell of lime.
~ Wrap the lettuce around the other ingredients and eat like a taco or wrap.
~ Take a bite, hold it on your tongue, chew well.
~ Say mmmmmmm, ooooooh, aaaah, yum! Savour it!

This amount is good for two people's dinner or four-six people's appetizers.  Prep time: 10 minutes.  Cooking time: NONE -- one of the pleasures of raw eating!
